I use a foil pan. Line the bottom with bread to keep the bottom from getting too dark and soak up the grease.

I do it in a loaf pan.... drain off the fat (not much) and let it rest.
Cool it in the fridge overnight and slice it up.
No damage at my house but a big storm blew through here a couple of days ago and did a lot of damage. 80-100 mph winds.
Gary and surrounding is completely without power from the storms.
